Meals are moments to stop and savour life’s important things. Time with family. Celebrating with friends. Laughing and catching up over fine wine and fresh gossip. Gathering around great food, with great company.
To the French – and to us – dining is deeper than just eating. It’s the feeling of the whole world standing still, just for a while. Just so you can sit down, eat and really be together with friends.
In France, they call this feeling Convivialité.
It means ‘Feasting with others’. It’s our favourite word. And it’s exactly what you’ll find here at Côte.
At the heart of French cuisine – and our cooking – is the idea of ‘Terroir’. The deep connection between a taste and a place. So we source all our ingredients with a respect for the Earth. And only work with farmers and growers who do, too.
We’re friends with families that have farmed France for generations. Everything we do begins with their perfect produce. We think and cook seasonally, following nature. Picking only the best ingredients, at their very best.
We care so much about our boeuf, that we built our own butchery. Ensuring every cut is up to our standards. Our Himalayan Salt drying room creates the unmistakable marbling that makes a steak at Côte, truly memorable.
And none of this would matter, if our kitchens weren’t full of the best people. Passionate chefs that cook with their heart and their soul. Expertly guided by Steve Allen, our Executive Chef and favourite perfectionist.
But if you really want to understand what all these things mean, don’t just read this. Sit down and eat with us. You’ll get it, when you taste it.
